The mackerel, fished in the Mediterranean Sea (FAO Area 37.2.2 and 37.1.3), is artisanally processed to maintain its natural tenderness and flavour, following the traditions of Sicilian cuisine. The preservation process in high quality extra virgin olive oil enhances the taste of the fish, adding a touch of Mediterranean flavour.
